Our Fish

Our fish (Seriola rivoliana), is known in the culinary world as Kanpachi. Our fish can be found from the western Atlantic, the Pacific Ocean and the Indian Ocean, and the Sea of Cortez. Kanpachi is well known by local fishermen in the Sea of Cortez as “El Pez Fuerte” (The Strong Fish) for its energy, stamina, and fighting spirit, and it is prized by sports fishermen worldwide for these qualities. Kanpachi can be easily identified by its characteristic dark, diagonal stripe through the eyes to the nape.

Our Kanpachi is described by top chefs as bright, crisp, and fresh. It is perfect for creating balanced, bold dishes that will delight and satisfy the most discerning palates.

Paradise

We are proud to raise our fish in a protected UNESCO World Heritage Site off the coast of La Paz, Baja California Sur, Mexico. Described as “the Aquarium of the World” by world-renowned environmentalist Jacques-Yves Cousteau, the Sea of Cortez is one of the most biologically diverse bodies of water, making it a paradise for scuba divers and a bucket-list destination for nature lovers from around the world. We are fortunate for the Sea of Cortez’s strong, deep-ocean tidal currents, as our location undoubtedly results in the healthiest, best tasting kanpachi.

Sustainability

We believe that sustainable aquaculture is essential to support our planet’s growing population, and when done right can help restore ecosystems by reducing pressure on wild fish stocks. We are therefore rigorously committed to practices that mitigate the impacts of farming on our natural resources. The welfare of our fish is our main priority, and great care is taken to ensure the fish are happy, healthy, and thriving. Our kanpachi are raised in low density pens in their natural ocean environment, where they have plenty of room to swim. They are fed a diet of the healthiest marine protein responsibly sourced from certified fisheries. We actively monitor the water quality to ensure favorable rearing conditions for our fish and commit to practices that avoid pollution and safeguard the ecological health of the ocean floor. Our innovative approach to aquaculture results in a stunning kanpachi that is good for you and the planet.
